For many people, the thought of changing to a whole
foods diet is a bit overwhelming. So to introduce the concepts
a bit more gradually, I've developed a 15 step cooking course. The
aims of this course are to:
- Introduce some of the key elements of whole
food nutrition
- Apply these elements to everyday eating
- Show how to replace poor quality modern food
stuffs with healthy alternatives
The course is composed of the following 15 lessons.
It is suggested you do one lesson a week, but it’s up to you
how you fit it best into your timetable.

- Stocks, soups & seasonings
- Raw veges and salads
- Baking
- Dinners
- Grains, legumes & vegetarian dishes
- Organ meats, and raw meat & fish dishes

- Tying it all together
As well the lessons, you can email me with up to
3 questions any time during the course. (That's 3 questions in total,
not 3 per email!). I also welcome your feedback and suggestions.
HOW
DOES IT COMPARE WITH NOURISHING TRADITIONS?
- It can be used as a companion to Nourishing Traditions, but
is also self contained for those people who don't have NT.
- It leads you through the concepts covered in NT, step by step,
to make it easier to integrate into your lifestyle
- The bread and baking sections include gluten free recipes
- Some of the recipes are a bit simpler for the cook with limited
time
- Some recipes include "compromise" foods to help make
the transition a bit easier
WHO
IS THE COURSE DESIGNED FOR?
People who
- want to start with whole foods and are looking for an introductory
text
- want a guide for working through the many concepts
- have got a copy of Nourishing Traditions, but are finding it
a bit daunting and don't know where to start
- are trying to combine whole food eating with a gluten free or
casein free diet, and are having trouble with the bread and baking
recipes in Nourishing Traditions
It does assume some basic cooking knowledge, so if you're a total
novice, you'll also need a kitchen handbook of some kind. On the
other hand, if you fell in love with Nourishing Traditions at first
sight and dived in head first, this will probably be a bit basic
for you.

A few "kiwi-isms" may have sneaked their
way in there, but if I've written anything you don't understand,
